    Q. I recently picked up a spaghetti box in the supermarket and was confused by the writing on the box and was hoping you can explain it to me.

    The box was Dreamfields Health Carb Living Spaghetti and it indicated on the side of the box the total carbohydrates was 41 g per serving.  On the back of the box it indicated the carb facts were total carbs 41 then minus fiber of 5 and minus protected carbs of 31 which led to a digestible carbs of 5.

    What does all this mean?  Can I eat this spaghetti or not?  Now is it 5 carbs or 41 carbs?  Explain for me the issues of fiber and carbs and digestible carbs and carbs, please.

    A. The pasta you are asking about appears to use a type of soluble fiber in their product called inulin.

    Inulin is mainly undigested in the GI tract.  A word of caution with this type of fiber, because it is undigested, you may experience gas or bloating so you will want to introduce it slowly to your diet.

    I would suggest a sort of trial with the pasta.  Test your blood sugar prior to eating the pasta and then 1 to 2 hours after you eat the pasta to see if it truly has no or minimal effect on your blood sugar.
